Banoffee Muffins

These Banoffee Muffins are packed with protein! For this recipe I have used Wazoogles Protein Powder, which contains a vegan form of protein (pea protein), as well as several superfoods, such as chia seeds, maca, mesquite, lucuma and hemp powder.

Did you know that oats are higher in protein than most grains? They also contain a wide variety of vitamins and minerals. If you are sensitive to oats, try substituting regular oats for the gluten-free kind.

Makes 7 muffins

Ingredients

1 cup oat flour
1 scoop of wazoogles kungfu coffee protein powder
2 large ripe bananas
1/3 cup coconut sugar
1/4 cup melted cold-pressed coconut oil
1/3 cup strong coffee
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Pinch of salt

Method

Preheat the oven to 180 degrees, then start by adding the bananas into a food processor, be sure to reserve 1/3 of a banana to place on top of the muffins. Process the bananas until they are broken down and smooth, then add all of the wet ingredients into the processor and combine on low speed.

Once all of the wet ingredients are combined, add the dry ingredients to the food processor and combine until you have a muffin batter.

Line a muffin tray with muffin liners and fill each liner with the muffin batter. Slice the 1/3 banana that you reserved and place these slices on top of the muffins.

Bake the muffins for 20-25 minutes.
